Jon’s Favorite Banana Bread

Ingredients

1 2/3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1 cup sugar
2 egg
1/2 cup oil
3 1/2 ripe bananas, mashed
2 tablespoons plain Greek yogurt or sour cream
1 teaspoon vanilla extract
2/3 cup walnuts, chopped

Directions

  1. Preheat oven to 350.
  2. Line a loaf pan with parchment paper and spray with Pam.
  3. Beat sugar and eggs with a whisk or electric mixer until light and fluffy, about 10 minutes. This is an important step and I actually time it.
  4. Drizzle in oil and beat until combined.
  5. Add mashed bananas, yogurt or sour cream, and vanilla.
  6. Now, you can be a purist and sift together the flour, baking soda, cinnamon and salt, OR you can just put these dry ingredients on top of the wet ingredients (flour first) give them a little stir on top before folding them into the wet ingredients.
  7. Stir in the walnuts.
  8. Pour the lined loaf pan and bake for about 45 minutes to 1 hour.
